Kale Salad with a Ginger, Honey & Yogurt dressing

Kale is one of the world’s healthiest foods. It is packed with vitamins and antioxidants GALORE! Although it can taste bitter, if eaten raw, a good dressing can balance out the flavors.

This is a simple Kale salad, made with a healthy yogurt sauce.

INGREDIENTS:

1 bunch of Kale (washed and chopped to desired texture)

1/2 cup shredded carrot

1/2 cup purple cabbage (shredded)

1/2 cup plain yogurt

1 Tablespoon red wine vinegar

1 Tablespoon fresh ginger (grated)

1/4 Tablespoon granulated garlic

1 Tablespoon honey

1/2 cup Crasins

 

DIRECTIONS:

Combine the vegetables and Crasins in a large salad bowl and set aside.

In a mixing bowl, combine the rest of the ingredients.

Using an immersion blender (or a food processor) blend all of the ingredients until the mixture is no longer chunky.

Toss the salad with the yogurt dressing and ENJOY!
