Ginger Mint Lemonade

This is one of the most refreshing drinks that I have ever tasted. It is the perfect balance of sweet, tangy and a little spice. It is perfect for hot summer days, and even as a mixer for your favorite spirits.

INGREDIENTS:

8-10 inches of whole ginger
2 1/2 cups lemon juice concentrate
1 bunch fresh mint
1 1/2 sugar (for simple syrup)
1 1/2 cups water (for simple syrup)
18-20 cups water

DIRECTIONS:

Chop ginger root into 1 inch pieces.

Place 1/2 of the ginger and 1/2 of the mint in a blender, add in 2 cups water. Blend on “HIGH” until ginger is finely liquefied. Add in 3 cups of water, and blend on “MED” for approximately 2 minutes.

Place a mesh strainer over the container in which you will store the lemonade. Slowly pour the mixture into the mesh strainer. Once the strainer is full, use a large spoon to push excess juice through, discarding the pulp. Continue until blender is empty. (Repeat prior steps for the 2nd half of the ginger and mint.)

In a small pot, combine the sugar and 1 1/2 cups water. Heat stirring frequently, until syrup is formed.

Add lemon juice and simple syrup to the ginger and mint juice, along with remaining 10 cups of water. You can adjust the amount of water in the end, based on how strong you want your lemonade.

Store in the fridge and enjoy over ice!.
