This perfect veggie filled dish is great for snacks, on-the-go lunches, on top of a salad, and most importantly…a fun way to get your kids to eat their veggies. It is so simple to make, and if made in a larger batch, will last you all week.
INGREDIENTS:
1 cup broccoli florets
1 cup shredded carrots
1/2 cup thinly sliced leeks
3 eggs
1 tablespoon garlic salt
1 1/2 cups cheddar cheese
1 1/2 cups almond meal
1 tablespoon water
DIRECTIONS:
Preheat oven to 400F.
Place broccoli florets into food processor, and pulse for several seconds, until broccoli is broken up.
Transfer broccoli into a pan and add the water. Cover with lid and steam on MEDIUM heat for 2-4 minutes, until broccoli is al dente.
Combine broccoli, shredded carrots, sliced leeks, garlic salt, eggs, cheese and almond meal in a bowl. Using your hands, combine all ingredients.
Form into small patties and place onto a baking sheet lined with parchment paper. If you are using a non-stick baking sheet, spray it down with cooking spray first. (DO NOT USE ALUMINUM FOIL).
Bake for 10 minutes, flip, bake an additional 10 minutes. Patties will get a nice, golden brown, crust.
VOILA!! Cool for 5 minutes and enjoy..
