Sweet and tangy are the only two words to describe this wonderful recipe. These potatoes will become your favorite, just like they have mine.
INGREDIENTS:
2 sweet potatoes
1 tablespoon of butter (sub for 1 tablespoon of coconut/olive/sunflower oil, if you are eating clean)
1/4 cup dill (chopped)
1/8 cup lemon juice
1 teaspoon salt
1 cup vegetable broth
2 1/2 cups water
DIRECTIONS:
Peel and cup potatoes and cut them into 1/2 inch slices.
Place in a pot and add the vegetable broth and water. Boil on MED heat for about 20 minutes, or until potatoes are cooked through.
Drain the water and add in the chopped dill, butter and salt.
Mash the potatoes and top with lemon juice.
