Gluten Free Orange Almond Shortbread Cookies

I am normally not a baker, however, I decided to try my hand at some gluten-free goodies. I was trying to create something that I could use as a base for a tasty appetizer, or a nice treat to go with tea time. You can also use this same recipe for gluten-free pie crusts.

These turned out surprisingly tasty and didn’t crumble apart, like most gluten-free baked goods. I hope you enjoy!

INGREDIENTS:

2 cups almond flour

1/3 cup baking sugar (or a granulated sweetener. DO NOT USE LIQUID SWEETENER)

6 tablespoons of butter (melted)

zest of 1 orange

 

DIRECTIONS:

Combine the almond flour, orange zest, sugar and melted butter.

Form the dough (it will be crumbly) into a round loaf and tightly wrap it with plastic wrap (or place in a large ziplock bag.)

Chill the dough in the freezer for approximately 45 minutes. (Dough should not crumble apart. If it does, reshape the round loaf and continue freezing.)

Once frozen, remove the plastic wrap and cut the cookies into 1/2 inch slices.

Place on a greased cookie sheet and bake at 325F for 15-20 minutes, until golden brown.

Cool the sheet before removing cookies.

*For the pie crust, press and shape the dough into pie tin (no need to freeze prior to shaping).  Bake at 325F for 15 minutes.*
