Hummus is, by far, one of my favorite snacks. In the summer I serve it with cucumber slices, drizzled with salt and lemon. This is a basic hummus recipe made with Tahini. Enjoy!
INGREDIENTS:
16 oz can of chickpeas or garbanzo beans.
1/8 cup liquid from can of chickpeas/garbanzo beans.
5 tablespoons lemon or lime juice (I prefer fresh squeezed, but bottled works just as well)
2 tablespoons Tahini
2 cloves of garlic (crushed)
1/2 teaspoon sea salt
2 tablespoons of Olive Oil or Sunflower Oil.
2 tablespoons diced Roma tomatoes.
1 tablespoon sliced green onion.
DIRECTIONS:
Drain chickpeas/garbazos and set the liquid aside.
Combine all ingredients in food processor and blend for 1 minute until smooth.
Transfer the puree to a serving dish and create small ridges on top of the hummus.
Top the hummus with Olive/Sunflower Oil and garnish with diced Roma tomatoes and green onion.
Serving Suggestions: Pita bread; cucumber slices; grape tomatoes; tortilla chips; carrot sticks..
