I can eat asparagus every day, for every meal. Broiling the asparagus for a few minutes is the perfect way to cook it just enough so that it stays perfectly crispy.
1 bunch of asparagus (I like the thick ones best)
1 Tablespoon of Extra Virgin Olive Oil (I use different oils, depending on what I’m serving the asparagus with. Try: Sunflower oil, Sesame Oil, Various Infused Oil Blends)
Salt and Pepper to taste.
Turn on oven to BROIL.
Wash the asparagus, and snap off and discard the bottoms (usually about the first inch will snap off)
Season with salt and pepper.
Toss in oil.
Place seasoned asparagus on a foil lined baking sheet.
Broil for 7-10 minutes.
Remove from oven, sprinkle with a touch of fresh squeezed lemon juice.
Serving Suggestions: Side to steak, fish, chicken; on the go healthy snack; cut into 1 inch pieces to top a salad.
