5 Roma Tomatoes
1 Haas Avocado – newly ripe
Fresh Dill (to taste)
Sunflower Oil (can be substituted with EVOO)
Salt (to taste)
Split tomatoes in half, length-wise. Cut each half into thin slices (as think as possible. You want the thickness of the tomato slices to be the same as the leeks and the avocado)
Trim off and discard the green parts of the leek so you have the heart left (the white part). Slice the remaining into very thin slices. I like mine to look shredded. *you can use a mandolin for this*
Cut the avocado in half (length-wise) and cut into similar thickness as leeks and tomatoes.
Chop the dill and mix in with the rest of the ingredients.
Add salt and oil.
Toss lightly and ENJOY!.
